Haast is less of a destination and more of a launching pad. It's the last proper stop before the Wanaka Region and the Haast River Holiday Park here is the best full-facility option for a good distance in either direction. There's a small store for basic supplies too, so stock up before you head into the pass.
The real draw around Haast is the coastline just to the north. Monroe Beach is a slow 30-40 minute walk to an isolated beach and if you're there between August and mid January, Fiordland Crested penguins nest at the northern end. Time it for dusk at low tide and you're in for something pretty special. Keep your distance though, if you crowd them the chicks don't get fed that night.
The stretch south down to Jacksons Bay is worth the detour. The fish and chips at the Craypot on the waterfront are genuinely some of the best I've had, and on a clear day you can see all the way up the coast to Mt Cook. The owner is fine with campervans overnighting near the wharf too, which makes it a cracking end to the day. Ship Creek on the way through is a quick stop that punches above its weight as well, a little coastal inlet with a viewing tower and a short walk through the Kahikatea trees.
The Haast area is serious sandfly territory. Have repellent on before you step out of the van, and long sleeves and pants aren't overkill here. Don't learn this the hard way.
